SESAME CHICKEN
Combine ½ c flour, ½ c mirin, ½ c cornstarch, ¼ c sake, ½ c toasted sesame seeds, 2 eggs, 1 t salt, 2 cloves garlic, and 5 T soy sauce. Marinate 30 chicken wings (60 half pieces or drumettes) for 2 hours. Make sure all pieces are well coated.
Add enough oil in a wok so that chicken pieces can float. Cook about 15 at a time at 275 degrees for 10-15 minutes. Drain on paper towels. Sprinkle with toasted sesame seeds.
To Toast Sesame Seeds, place in a dry heavy skillet over medium heat. Stir constantly until lightly browned (about 2-3 minutes). |
